In 1978, Dion Priebe opened a small pizza window on Central Ave in Albuquerque with a simple promise: real ingredients, honest prices, and a slice that would make you come back tomorrow. Armed with his grandmother's dough recipe and a passion for New Mexico flavors, Dion quickly earned a loyal following that stretched across the city.
What started as a one-man operation has grown into a beloved local institution with multiple locations, thousands of regular customers, and a team of dedicated people who share Dion's original vision. We haven't forgotten where we came from — every pizza is still hand-stretched and every sandwich is freshly made to order.

The First Slice
Dion Priebe opens a small pizza counter on Central Ave NE in Albuquerque with his grandmother's dough recipe and a dream to make the city's best pizza. Lines form on day one and never stop.
Growing the Family
Demand outgrows the original counter. Dions opens its first full sit-down restaurant and expands the menu to include the iconic Green Chile Sub — now a local legend in its own right.
Expanding Across the City
Three new locations open across Albuquerque, bringing Dions to the east and west sides of the city. The Dions loyalty program launches, rewarding regular customers with free pies and exclusive perks.
Community Roots Run Deep
Dions launches its school fundraiser program, donating a percentage of every order to local schools. Over the next decade, the program raises hundreds of thousands of dollars for Albuquerque education.
Online Ordering Launches
Dions embraces technology with the launch of online ordering — one of the first local pizza restaurants in New Mexico to do so. Customers can now order their favorites from home, work, or on the go.
Adapting with Resilience
Facing the unprecedented challenges of the pandemic, Dions pivots to contactless delivery and curbside pickup within days. We donate thousands of pizzas to frontline healthcare workers across Albuquerque.
